TOMATO SAUCE INGREDIENTS:
10 ripe tomatoes
1 onion, chopped
2 carrots, chopped
1 green pepper, chopped
4 cloves of garlic, minced
1/4 cup fresh basil, chopped
2 tbls olive oil
2 tbls butter
1/4 teaspoon Italian seasoning
1/2 teaspoon oregano
1/4 cup red wine
2 tbls tomato paste
Salt and Pepper to taste (I put in at least a teaspoon of each)
I MADE A DOUBLE BATCH ON SUNDAY
Bring a pot of water to a boil. Have ready a large bowl of cold water nearby. Core tomatoes and then plunge them into the boiling water until skin starts to peel, about one minute.
Remove tomatoes with slotted spoon and dunk into ice cold water. Let rest until cool enough to handle, then remove peel and squeeze out seeds. Put 8 tomatoes in blender and puree.
Chop 2 remaining tomatoes and set aside. In large pot over medium heat, melt butter and olive oil, and cook onion, pepper, carrot and garlic until onion starts to soften, about 5 minutes.
Pour in pureed tomatoes.
Stir in chopped basil, chopped tomato, seasonings and wine. Bring to a boil and then reduce heat to low, cover and simmer for 2 hours. Stir in tomato paste and simmer an additional 2 hours. You can leave it chunky, or once it cools you can put the sauce in a blender and puree it so the onion, pepper, carrots, basil, etc. aren't chunky. It's up to you. I pureed mine, but didn't get a picture of it, so here is the chunky sauce in the pot!

Yum - looks good to me! I'm impressed that you make your own sauce. I'm such a lazy butt, I've never made mine from scratch. Homemade stuff always tastes so much fresher, don't you think? Thanks for you encouragement and making me smile by giving me a goal in September to achieve. It truly lifts my mood and does make me feel so much better. Hearing from people like you and Tracy just makes me feel like you guys are right here with me (as weird as that sounds). So thank you...I hope things are going well with you (hugs)

I just read your other post to get caught up - I'm glad that your dad got a new plan and I hope things continue to go well with him and therapy. Sorry for the three comments!
Yum! Do you jar/can this?
I jar it but then freeze it because I don't yet know how to can. My mother in law is supposed to show me, but I haven't had time to go over and learn! I got 4 full-size spaghetti sauce jars out of my double batch.
Canning or bottling is a lot of fun! I did it in Italy once and it's not hard at all. Lots of boiling and burnt fingertips.
I'm on vacation so I have lots of catching up to do on your news. Glad things are progressing on all fronts. I'm sure there are 100% hotblooded, smart 'n savvy Italians in Michigan!!!
