I'm always stuck with overripe bananas, and I get sick of always making banana bread, so last week I made Banana Cinnamon Jam. It was a hit, and Tony even liked it! It is great on toast and waffles!
Banana Jam
2 lbs ripe bananas
3 3/4 Cup white or brown sugar
1 1/3 Cup water
juice of 3 lemons (or limes)
2 teaspoons cinnamon (or more, depends how much you want it to taste of cinnamon)
3 tablespoons of pure vanilla extract
1 dash of ginger powder
Peel and mash the bananas.
Mix water, lemon juice, sugar, cinnamon, vanilla, ginger over moderate heat and stir until syrup thickens. Add the mashed bananas and let cook 20 to 25 minutes, stirring occasionally. Immediately place in jam jars and seal.

Oh, thats fantastic - I get sick of banana bread, but I always have either green or black bananas. (Where, oh where are the perfectly ripe ones? I always miss them!)
Of course, now I am hungry.

Oh yum yum yum! Thanks for sharing :-) Totally off the subject, but wasn't it crazy about McC.ain's wife hurting her wrist and having to go to beaumont from shaking someone's hand too vigorously? My friend was working there today and said there was a huge commotion and a ton of news vehicles outside the hospital :-)
I wondered the same thing if the person who shook her hand knew that they were the one who messed it up? Wouldn't you feel like a putz if he ends up becoming president and you hurt the first lady with your handshake, LOL!
