I've been trying out various banana cake recipes and I finally found the perfect one. I made it on Sunday and it turned out perfect. Perfectly moist, perfectly stiff, and very yummy. I also made a banana cream pie but it was horrible! Ugh I'm still on the hunt for the perfect banana cream pie recipe, so if you have one, give it to me please.
Also tomorrow is my husband's birthday and I want to make a nice meal - does anyone have any suggestions?
BANANA CAKE RECIPE
1 3/4 c flour
1/2 tsp baking soda
1/4 tsp salt
2 1/4 tsp baking powder
1 1/4 c sugar
1/2 c butter softened
1/4 c buttermilk
1 1/4 c mashed ripe bananas
2 large eggs
1. Pre-heat oven to 350 degrees
2. Measure flour, soda, salt, baking powder and sugar into mixing bowl.
3. Add softened butter and mix at medium speed of electric mixer until the mixture is a "mealy" consistency.
4. Add buttermilk and mashed bananas gradually and mix for 4 minutes. Your mixture should be light and fluffy.
5. Scrape the mixture from the sides of the bowl and add eggs in two additions. Beating after each additional egg.
6. Pour into greased and floured cake pan. I used my 10 inch square pampered chef stone baker.
7. Bake for 50 minutes. Cake should be golden brown. The original recipe said to bake it for 25 minutes, but it assumed that you would be baking 2 smaller pans to layer the cake. Clearly when the cake is all in one pan, you need to cook it longer. It took 50 minutes in my oven.
8. Cool cake completely before frosting.
BANANA FROSTING
1 lb powdered sugar
6 tbls butter, softened
2 tbls cream or half and half
1 tbls light corn syrup
1/2 c ripe, mashed bananas
1. Cream the butter and sugar together and slowly add the cream.
2. Gradually add the mashed bananas as you beat it .
3. Add corn syrup and mix enough to blend well. The corn syrup will help the frosting to set.
4. Frost cake and store in refrigerator.
